When opening a sandwich shop where we were going to focus on a few things , you need more than Great Recipes, you need quality ingredients to start with.   Corned Beef is one our Big things …..well it is a really big thing. We had Ingrids secret family recipe,   but we needed high quality brisket, then corned.   We considered finding the brisket and corning ourselves.   But as a small shop we did not think we could handle the corning process consistently.    We tried at least 20 different corned beef products, and we got real lucky.   Wayne Nell and sons has been in business a long time, we have frequented their shop in East Berlin since living here.   Our goal  is to procure the best ingredients and whenever possible work with local vendors.   Understand their story and be a part of sharing that story.   Well Wayne Nell bent over backwards to work with us, they worked with our specs and produce the best most consistent corned beef brisket we can get. Shawn and team are awesome to work with and are in constant contact with us in ensuring we get the perfect product.    We feel we are producing some of the best corned beef possible and your feed back supports that.
